While expanding my knowledge and palette this month with sparkling wines, I decided it was time to add some new sparkling wine cocktails to my repertoire as well. After a bit of researching, I narrowed my list down to these 5. They run the gamut from simple to involved (prep wise), fancy to fun, and complex to sweet (taste wise).  All in all, it’s a great start in sampling the joy and variety of sparkling wine cocktails.

Classic Prosecco Cocktail

My favorite way to enjoy Prosecco is with a splash of St. Germain. The elderflower complements this sparkly wine so well. One day I was playing around and added lavender bitters, and just like that, one of my favorite creations was born. No measurements for this one, just use your heart. Trust me.

Ingredients:

  • Prosecco
  • St. Germain
  • Lavender Bitters

Directions:

  1. Add St. Germain to your glass
  2. Top with as much Prosecco as your heart desires
  3. Add a few drops of lavender bitters (or whatever tickles your fancy at the moment)
  4. Take a sip and relax

French 95

I love a good French 75, it remains one of my top 3 favorite cocktails. A few years ago I was introduced to its cousin, the French 95, which is made with bourbon instead of gin. This is a tasty twist on an old favorite.

Ingredients:

  • Bourbon- 2 oz
  • St. Germain- 1 oz
  • Lemon juice- 1/2 oz
  • Champagne or sparkly wine of choice

Directions:

  1. Add first 3 ingredients to glass
  2. give a gentle stir to combine
  3. Top off with champagne
  4. Enjoy

 

Pineapple Dole Whip Mimosa

I came across this tasty and decadent cocktail courtesy of Diethood. The Dole Whip was one to the best things I had at Disney World, so I jumped at the opportunity to recreate this pineapply treat in mimosa form.

Ingredients:

  • Prosecco
  • Pineapple juice- 1 cup
  • Coconut milk- 1/3 cup (do not use canned version)
  • Whipped cream, I used a freshly made boozy whipped cream for this treat 😊

Directions:

  • In a bowl thoroughly mix the pineapple juice and the coconut milk
  • Add the pineapple/coconut mix to your glass- as much as you’d like
  • Top with Prosecco
  • Add whipped topping, if desired
  • Garnish with pineapple or whichever fruit strikes your fancy

Now, I had a little fun with this one and made up a batch of vodka infused whipped cream. It was very easy to make:

  1. Take some heavy cream- the amount depends on how much you want to make (I used about 3/4 cups)
  2. 1-2 ounces of your spirit of choice (rum, vodka, bourbon, etc.)- add more if you’re making a large amount
  3. Powered sugar
  4. Optional: a few drops of chocolate bitters
    • chocolate goes so well with pineapples and strawberries, so I thought why not?

This cream is DELICIOUS and can be used in all sorts of ways: in coffee, a topping for cake or brownies, a cookie sandwich,… the possibilities are limitless.

Rosemary Blood Orange Cocktail

This sparkling cocktail is courtesy of Yummly. The idea of blending blood orange (a winter fav) with rosemary struck a nerve. So really, I had no choice but to try it.

Ingredients:

  • Champagne
  • Club Soda
  • Blood Orange syrup 1/2 oz (get recipe for syrup here)
  • Rosemary sprigs for garnish

Directions:

  1. Add approximately 3 oz of Champagne to a coupe glass
  2. Add Blood orange syrup
  3. Top off with club soda (about an oz or so)
  4. Garnish with blood orange wheel and rosemary

I found this cocktail to be delightful light with a cosmopolitan air about it. I’m seeing more experimentation with this one in the future. There’s definitely room to play with flavored sparkling waters.

Treaty of Paris

I found this cocktail via Imbibe. And as soon as I saw Earl Grey simple syrup, I knew I was going to love this one. I was not disappointed.

Ingredients:

  • Cognac- 1 1/2 oz
  • Lemon juice- 3/4 oz
  • Earl Grey simple syrup (get recipe here)
  • Egg white
  • Champagne

Directions:

  1. Add first 4 ingredients to a cocktail shaker and do a dry shake for about 15-20 secs to emulsify the egg white
  2. Add ice to the shaker, and do a wet shake for about 10-15 secs to chill the cocktail
  3. Strain into glass
  4. Top with champagne
  5. Enjoy
